Introduction

This is a healthy spin on a wonderful Jewish side dish. It can also be used as a dessert! You can use water-packed pineapple tidbits in place of the peaches if you prefer. Ingredients

    1 lb. bag egg noodles
    (can use whole wheat if desired)
    1.5 cups egg substitute (such as Egg Beaters - equivalent to 6 whole eggs)
    1 lb. (16 ounces or 2 cups) 2 percent milk-fat cottage cheese
    1 cup 2 percent milk
    2 tbsp. low-fat sour cream
    2 tsp vanilla extract
    1 15-16 oz can peaches, packed in water, drained and chopped
    4 tbsp. Splenda Sugar Blend for Baking
    1 tsp. baking powder
    1/4 cup melted Promise (or other brand) fat free margarine
    Non-stick butter flavored cooking spray

Directions

Cook egg noodles in boiling water for 10 minutes. Drain well.
Whisk egg substitute, milk, sour cream, margarine, vanilla extract, Splenda and baking powder together in large bowl. Add cottage cheese and chopped peaches (or pineapple tidbits). Mix well. Add noodles. Pour into a large square or rectangular glass pan sprayed with non-stick butter flavored cooking spray. Bake for 1/2 hour at 350 degrees, then 400 degrees for 15 to 30 minutes, until firm set.

Makes about 8 servings, equally divided
