Introduction

Ingredients

12 oz chicken breast (I use tenderloins)
1 cup of diced white onions
2 cups of sliced mushrooms
Zest of 1 lemon
Juice of 3 lemons
2 cups trader joes FF chicken broth
3 cloves of crushed garlic
1/8 cup Wondra Quick Thickening Flour
1 tsp EVOO
Garlic Salt and Pepper to Taste
Directions
In a skillet on medium heat at EVOO, garlic, onions, mushrooms, lemon zest and Garlic salt and pepper.
Saute for about 2-3 minutes until onions start to get translucent. Add the chicken and brown on both sides. When brown add the Lemon juice and deglaze the pan scraping up any brown bits. Add the chicken broth and bring to a boil. Cover lower the heat and cook until chicken is cooked thru about 6 minutes. Remove cover and turn heat to high, when the sauce begins to boil add the wondra to thicken the sauce (this can be ommitted if you don't want a thicker sauce).
If you like a true picatta you can pound at the chicken flat to reduce cooking time (I use tenderloins and don't pound them flat). Also you can add capers at the end if you prefer.
