Ingredients

    4 boneless skinless chicken thighs
    1 cup cut into slices yellow pepper
    1 cup cut into slices red pepper
    1 cup cut into slices green pepper
    1 cup cut into slices onion
    1 cup cut into slices mushroom
    1/4 cup green olives
    .5 cup sofrito
    4 cups chicken broth
    2 cups rice

Directions

Place chicken broth in a pot to boil for 30 minutes. remove chicken cut into pieces. Remove broth, measure 4 cups, put back into pot bring to a boil. Add all veggies, sofrito, chicken and rice. Bring back to boil, reduce heat to low and simmer 20 minutes.
