Ingredients

    1 cup Hulled Barley
    1 can diced tomatoes (15 oz size)
    1 small onion (diced)
    1 cup chopped mixed bell peppers (or your favorite blend, sweet, spicy, in season or ?)
    2 cups broth
    1 cup water

Directions

Spray olive oil in your rice cooker. Put in all ingredients and run it for about an hour or until all liquid is absorbed.

    Very Good
    Was very easy and tasty. I added some seasonings to the recipe as well as garlic. Hubby and I loved it! Cooked it on the brown rice setting. - 8/28/13
