Ingredients

370g lean diced lamb
80g white onion
1 large garlic clove
110g courgette (zucchini)
80g carrot
50g frozen petit pois peas
4 x rashers of lean unsmoked bacon - diced and rind removed
1 x stockcube - make up to 1/2pint of stock
80g green pepper
100g mushrooms of your choice
1tsp fresh thyme
3 bay leaves
1 tsp dried mint
1 tsp dried parsley
salt and pepper to taste
Directions
makes 2 large portions for hungry - but diet conscious people! Could serve 3 or 4 with extra helpings of Veg.
Pre-heat your slowcooker on high.
Saute the onion and garlic in spray oil and add the chopped back bacon.
Chop the courgette into bite sized pieces and add to the pan
Chop the peppers and add to the pan
when bacon is cooked and getting crsipy add your lamb to the pan and brown. Add the dried mint and parsley.
Meanwhile make up your stock.
Add the contents of the pan to the slow cooker and reduce heat to "low" Pour over the stock and season
3 hours in add your thyme and bay leaves
An hour before serving add your mushrooms.
Serve with mashed potato or couscous.
