Ingredients

    1 7oz pkg thin spaghetti
    1 tbsp unsalted butter
    1-1/2 lbs lean ground beef
    8 oz spaghetti sauce
    8 oz low fat cream cheese
    1/4 c light sour cream
    1/2 lb 2% cottage cheese
    1/3 cup scallions
    2 tbsps melted unsalted butter

Directions

Cook spaghetti and drain.
Saute beef in butter until brown.
Add tomato sauce salt and pepper, remove from heat.
Combine cottage cheese, cream cheese, sour cream, scallions, and green pepper in a food processor.
In a 2 qt casserole spread one half the spaghetti and cover with the cheese mixture.
Add remainder of spaghetti and pour melted butter over spaghetti.
spread tomato-meat sauce over top.

    Husband loved it, I thought it was too sweet. I used Ricotta in place of cottage cheese and topped it with mozzarella. - 4/18/17
