Ingredients

2 cup Black beans, dry
2 cup sweet onion chopped
6 cloves garlic 4 chopped & 2 whole
8 tsp ginger root chopped fine
1 cup celery chopped
1 cup carrots chopped
2 tbsp olive oil
8 cups water
1 Tbs curry powder
2 tbsp cumin powder
3 large bay leaves whole
Directions
put beans up to soak in 3 cups of water overnight in a large bowl w/2 whole cloves of garlic
Heat oil in a large stock pot, add onions, ginger,& garlic to the pan, reduce heat and simmer until tender.
Add carrots & celery and toss, cover and simmer until slightly tender.
Add spices including bay leaves and toss to cover
As the veggies begin to simmer again, add the beans and soaking liquid cover and bring to a boil, reduce the heat and continue simmering for 20+ minutes. Turn off the heat and let your beans sit unitl the blend is cool.
Add the balance of the water and bring to a boil. Reduce heat and simmer again for as long as you like or until the beans are tender.
