Ingredients

    1 large onion cut into thin even slices
    1.5 tbsp butter
    4 cups cherry tomatoes
    150 grams boca ground burger
    8 cups fresh spinach
    10 cups spaghetti squash
    1 oz parmesan grated
    6 oz mozzarella cheese
    1tbsp salt
    pepper to taste
    garlic powder to taste
    dried basil to taste

Directions

Melt the butter into a large skillet
When hot add the thinly sliced onion to the pan. It is important that the onion is sliced evenly or it will caramelize at different points
take a pinch of the salt and salt the onions
Let the onion cook over medium low heat until dark brown (40-50minutes) stirring occasionally. You will have to stir more frequently once the onions start to brown, the caramelization happens pretty quickly at this point
Pre-heat the oven to 450
Pierce squash several times with a knife place it in the microwave for 10-12 minutes and let stand for at least five
While the squash is cooking add the cherry tomatoes whole and cover the skillet for about 5 minutes
The tomatoes should be soft at this point and you can squish them down with the back of your spoon add another pinch of salt
Add the boca ground and stir it in
add the spinach in bunches. as it cooks down add more
add another pinch of salt to the mixture
once the spinach is wilted add the spaghetti squash
Add the reamining salt, pepper, garlic powder, and basil
add the parmesan and stir everything together
Take individual baking dishes or a large casserole dish
If using individual dishes spoon 2 cups of the squash mixture into each one and cover with 1oz of mozzarella
If using a casserole dish put it all in together

Bake for 20-25 minutes until cheese is browned and bubbly

    This was very tasty and a whole meal in one dish. I used a large can of choped tomatoes in place of the cherry tomatoes and added mushrooms when frying the onions. I will definately make this again. - 12/17/08

    This is pretty good. I really like it. Because of the mild flavor of the squash it really turned out good. I used ground turkey and didn't have the spinach. I used cumin and taco seasoning to flavor it. Made it a bit like a Mexican dish. - 4/11/09
