Introduction
Quick, easy, protein packed egg bake. Use large sized muffin tins or individual loaf pan to make perfect portion sizes. Freeze for portability.I usually make several pans of these at a time, with different ingredients per pan. Use your favorite ingredients.
Some of my favorite variations include:
-black beans, cilantro, onions, cumin
-salmon, spinach, feta
-turkey chorizo, cilantro
-mushrooms, turkey bacon

Ingredients

4 cups kirkland (costco) egg sub
3/4 cup shredded cheese
2 morningstar farms soy sausage patties, diced
salt & pepper to taste
Directions
Preheat oven to 350 degrees. Coat muffin tin or mini-loaf pan with non-stick cooking spray.
In large measuring cup with pour spout, mix egg sub, cheese, salt & pepper. Pour equal amounts into individual loaf pan (for 8 servings) or large size muffin pan (12 servings) Place equal amounts of soy saugage pieces into each portion.
Bake 10-15 minutes or until egg mixture is set & no longer runny.
