Introduction

Quick, easy, protein packed egg bake. Use large sized muffin tins or individual loaf pan to make perfect portion sizes. Freeze for portability.

I usually make several pans of these at a time, with different ingredients per pan. Use your favorite ingredients.
Some of my favorite variations include:
-black beans, cilantro, onions, cumin
-salmon, spinach, feta
-turkey chorizo, cilantro
-mushrooms, turkey bacon

Number of Servings: 8

Ingredients

    4 cups kirkland (costco) egg sub
    3/4 cup shredded cheese
    2 morningstar farms soy sausage patties, diced
    salt & pepper to taste

Directions

Preheat oven to 350 degrees. Coat muffin tin or mini-loaf pan with non-stick cooking spray.

In large measuring cup with pour spout, mix egg sub, cheese, salt & pepper. Pour equal amounts into individual loaf pan (for 8 servings) or large size muffin pan (12 servings) Place equal amounts of soy saugage pieces into each portion.

Bake 10-15 minutes or until egg mixture is set & no longer runny.
