Introduction

Ingredients

    1 thawed 32 ounce package frozen hash brown potatoes (I prefer Potatoes O'Brien)

    16 ounces cooked diced ham

    3/4 cup egg beaters

    1 10.75 ounce can cream of potato soup

    8 oz sour cream (light used for caloric calculation)

    2 cups shredded sharp Cheddar cheese

    1/4 - 1/2 cup grated Parmesan cheese (can use more...I just don't care for it that much)

    diced green onion (optional)

    salt & pepper to taste

Directions

1) Preheat oven to 375 degrees. Lightly grease 9 x 13 inch baking dish.

2) In large bowl, mix hash browns, ham, cream of potato soup, egg beaters, sour cream & Cheddar cheese. Add salt & pepper to taste.

3) Spread evenly into prepared dish. Sprinkle with Parmesan cheese.

4) Bake 1 hour in the preheated oven or until bubbly & light brown. Serve immediately.

Makes 12 servings.
