Ingredients

Two Cod Fillets (boned or unboned)
3 Tbsp Kraft Fat Free Miracle Whip
2 tsp Dried or Fresh Dillweed
    1 Sliced Lemon

Cut cauliflower and carrots (how ever much desired)

2 cups Rice (whatever kind wanted)
1 Cup low sodium chicken broth (optional)
    1/2 cup diced onion
    1 tbsp Butter

Directions

Place Cod in tinfoil (on a pan) and spread Miracle whip on it. Sprinkle dill, squeeze a little lemon juice on and place sliced lemon rings on top. Tightly wrap fish in tinfoil. Bake at 400 c for around 10-20 mins (depending on the thickness of fish) Check at around 15 mins and if fish is cooked thru and flaky take out.

Boil or steam veggies.

Rice

Saute onion in butter in bottom of pan you will cook the rice in. (I added a sprinkle of dill as well)
Cook rice until done (whatever your rice recipe calls for) I added one cup of broth for some flavoring.

Enjoy!!

This was really good. I added a little low sodium soy sauce & sirachi sauce with steamed edamame. It was delicious! - 1/4/12

    Very Good
This was so yummy - and easy! I really liked the dill. We had couscous instead of rice and a fruit salad. It was a great meal - thanks for the recipe! - 6/1/09
