Ingredients

    Wild Salmon, 1 fillet
    Spinach, frozen, 2 cup
    Minced Garlic, 4 cloves
    Finely chopped White onion, 1 medium
    Garlic powder, 1 tbsp
    Basil, dry or fresh, 1 tbsp
    Lemon Juice
    Oregano, dry or fresh, 1 tsp
    Sea Salt, 1/4 tsp
    Olive Oil, 1 tbsp

Directions

Makes 2 servings.

Thaw spinach in microwave, drain and squeeze out as much water as possible. Heat 1/2 tablespoon olive oil in a wok or medium frying pan, then add onion and garlic, stirring often.

While the onions and garlic are beginning to heat up, heat 1/2 T olive oil in a nonstick frying pan, and place the salmon filet in the heated oil. Sprinkle with garlic powder, oregano, and basil to taste. Sprinkle with a very small amount of lemon juice. Turn when filet starts to turn pink.

Add the spinach to the wok when the onion is translucent, and stir fry with 1/4 t sea salt until all ingredients are hot and well-mixed.

Place the spinach mixture in the middle of a warm plate, place the cooked salmon on top, and enjoy!
