Introduction

Quick and healthy salad or side dish. Quick and healthy salad or side dish.

Ingredients

    16 oz can of Chick Peas
    1/2 cup chopped cucumber
    10 grape tomatoes
    1/2 cup chopped red onion
    2 cloves or garlic
    1 tbsp. olive oil
    1/2 lemon, juiced
    splash of red wine vinegar
    1/2 cup crumbled feta cheese
    dried dill and oregano to taste
    salt and pepper to taste

Directions

Rinse chickpeas and put in bowl.
Add chopped cucumber, grape tomatoes (sliced in half), chopped red onion, and garlic. Drizzle with olive oil, lemon and vinegar. Mix and add in the feta cheese, and seasonings. Let chill in the fridge for 2 hours for flavors to incorporate.
Yeilds about 3 - 1 cup servings.
