Ingredients

    8 oz. Whole Wheat Elbow Macaroni (Cooked and Drained)
    1 large can Diced Tomatoes
    1 8 oz. Can Tomato Sauce
    1 Can Black Beans (Drained and RInsed)
    1 Can Sweet Corn ( Drained and Rinsed)
    1 Tbsp. Extra Light Virgin Olive OIl
    1/2 cup Chopped Sweet Green Pepper
    1/2 cup Chopped Sweet Red Pepper
    1/2 cup Chopped Fresh Onion
    2 Tbsp. Chili Powder
    1 Tsp. Parsley
    1/4 Tsp. Garlic Powder
    1/4 Tsp. Onion Powder
    1/4 Tsp. Paprika
    2% Fat Mild Cheddar Cheese Shredded


Directions

Cook pasta and add to Slow Cooker
Add Tomatoes, Beans and Corn and Mix.
Sautee Peppers and Onion in Olive Oil then add to Slow Cooker
In a small bowl blend spices into tomato sauce then add to mixture in slow cooker.
Mix well then heat on high setting for 2 hours so flavors cook through (Or simmer on stove top on very low heat for 1 to 2 hours).
Serve with 1 oz. of cheese sprinkled on top.

(NOTE: Carefully rinsing the beans and corn should lower the sodium content calculated).
