Introduction

Great with a stir-fry. The kids all love it if I don't make it too hot. I like it spicy. Great with a stir-fry. The kids all love it if I don't make it too hot. I like it spicy.
Number of Servings: 4

Ingredients

    2 cucumbers, peeled, seeded, and cut in 1/2 in slices.
    8 grape (cherry) tomatoes, cut in half.
    4 scallions cut in 1/2 inch pieces.
    1T vinegar
    1T soy sauce
    2t sugar
    2t seasame oil
    dash tabasco sauce (to taste)

Directions

Peel cucumbers and cut in half lengthwise. Remove seeds with a spoon. Use a fork to scratch lengthwise grooves on the outside of the cucumber. Slice into 1/2 inch slices.
Cut grape (or cherry) tomatoes in half
Cut scallions in 1/2 inch pieces (optional).

Mix remaining ingredients well. Add to vegatables and chill 1 hour before serving. Makes 4 1/2 C servings.

    This salad is wonderful! Perfect with any Asian dish and great for lunch the next day. I use garlic chili paste instead of Tabasco and add some minced fresh ginger. - 10/14/10
