Introduction

A great way to use up leftover chicken and a very filling soup for lunch or dinner A great way to use up leftover chicken and a very filling soup for lunch or dinner

Ingredients

    5 cups homemade chicken stock
    2 cups salsa
    2 cooked chicken breast--shredded or cubed
    1 medium onion-diced
    0.5 large yellow pepper-diced
    1-19oz can Primo mixed beans-drained (or you can use black beans if you like)
    1 large celery stalk

Directions

Mix everything together and heat on low in your slow cooker while you are out for the day.
When you come home make a quick tossed salad and sit down and enjoy a hearty soup and salad night---better than any restaurant because you can enjoy THIS soup with your feet up!
This is even better the second day so it's great for lunch.
