Introduction

Ingredients

1 10-oz. package frozen spinach
2 tablespoons minced garlic
2 tablespoons olive oil (divided)
2/3 cup cottage cheese (I use 2% fat)
2 tablespoons freshly squeezed lemon juice
1/3 cup low fat parmesan cheese
1/4 teaspoon salt
1/4 teaspoon or more freshly ground black pepper
Directions
Thaw spinach. Place in food processor. Saute garlic in 1 tablespoon olive oil until cooked and some is just beginning to turn golden. Add to food processor with remaining ingredients and process until smooth. Serve with raw veggies or crunchy bread products (toasted bagel chips, bread sticks, thick pretzels). Total recipe makes about 2 cups. Serving size is 1/4 cup.

This might be a better recipe if the garlic was 2 teaspoons. 2 tablespoons is A LOT of garlic!! It is VERY garlicy. I actually added more Parmesan, more lemon juice, and a 1/4 cup of lowfat vanilla yogurt, in order to make it palatable. - 1/28/10

Yes, you're right -- that's a lot of garlic! I really like that much garlic -- I guess its a personal taste, however, I've only made this recipe once -- my husband really complained about the smell of cooking the garlic! So - garlic lovers - this recipe is for you!!!
