Introduction

Number of Servings: 4

Ingredients

    3 cups of fresh spinach
    8 oz bow tie pasta (cooked and cooled)
    1/2 cup sunflower seeds
    1/2 cup chopped scallions
    3 chicken breasts - seasoned heavily with lemon pepper gilled and cut into bite sized pieces
    1 cup of bean sprouts

    Dressing:
    1/5 Canola oil
    1/2 sugar (could use splenda)
    1 tsp salt
    1 tsp sesame oil
    3 tbsp soy sauce
    2 tbsp rice vinegar
    1 tsp fresh chopped garlic

    Store in fridge - return to room temp before combined.

Directions

Toss together all the ingredients, drizzle the dressing over the pasta salad and enjoy!

I would recommend serving some fresh baked bread - or rolls with it :-)
