Ingredients

    Lentils, .5 cup
    Onions, raw, .5 cup, chopped
    Garlic, 2 cloves
    *Ezekiel 4:9 Sprouted Grain Bread, 1 slice
    Yellow Peppers, 2 pepper, large
    Oregano, ground, 1 tbsp
    Basil, 1 tbsp
    Red Ripe Plum Tomatoes, 2.5
    Olive Oil, 1 tbsp
    Tomato Sauce, 1 cup

Directions

Sautee onions and garlic in olive oil
Cut tops off peppers and chop; add to onion/garlic mixture and satuee
Toast slice of Ezekiel Bread and crumble
Use food processor to smash up tomatoes and add together with onions garlic and peppers; add in spices with salt and pepper & simmer; take off heat after 10 mins and crumble in bread
In oven safe dish set peppers standing upright
Fill peppers with lentil mixture and put into 400 degree oven; bake for 25 mins and top with favorite tomato sauce and oregano

    Not really sure what to do with the lentils - nothing in the instructions. Good concept and used the general idea with barley instead of bread. - 7/22/09
