Ingredients
-
8 Corn Tortillas
4 Battered Fish Fillets
1 Cup fresh, shredded Cabbage
4 tbsp of Light Ranch Dressing
2 cups Pinto Beans (smashed)
Directions
Bake the fish fillets according to directions on the box and heat the beans in a pan.
While the fish is baking and the beans are heating, start chopping the cabbage and set to the side.
About 3 minutes before the fish is finished, place the tortillas in microwave and heat for approx. 2 minutes.
When fish is finished, cut each into 1/2 and place each piece in a corn tortilla (1 fish=2 tacos). Add a few slices of the shredded cabbage to each taco, drizzle 1/2 tbsp of ranch dressing on each taco. Add a 1/2 cup of mashed pinto beans to the side of your plate and you have a whole meal that is so delicious.
