Ingredients

    1 cup brown rice
    2 14-ounce cans 99% FF chicken broth
    2 tbsp. olive oil
    2 cups chopped celery
    1/4 tsp. black pepper
    1/4 cup chopped onion
    8-ounce can sliced water chestnuts
    6.5-ounce can mushroom slices, drained

Directions

Makes 6 servings
Pour olive oil into pan and turn burner on medium. When oil gets hot, add celery and green onion. Cook until slightly brown. Add chicken broth, rice, pepper, water chestnuts and mushrooms.

Cook 45 to 50 minutes until rice is tender and liquid is absorbed.
