Ingredients

    Egg substitute, or egg whites (such as Egg Beaters), 1 fresh zucchini, any type of ready cooked bacon, or turkey bacon, and soy sauce

Directions

This dish makes about 3 servings if you put it all together. It is very filling for my son and I. I slice the zucchini in 1/4 inch squares and put them in a saucepan and let boil with water and a tablespoon of soy sauce. In a separate pan, I cook one cup of egg beaters and dash with salt and pepper. I then place 3 slices (1 serving) of ready cooked bacon (I nuke it for about 45 seconds, or until crunchy), crumble it in the egg beaters, then put in the cooked zucchini. I blend it all together, and Yum. Hope you enjoy. Very easy. I use half for breakfast. Even good for dinner.
