Ingredients

    3 large tomatoes
    1 medium onion
    1/2 c. black brined olives
    4 cloves garlic, sliced plus 1 tsp. minced
    3 tbsp. olive oil divided
    2 tsp. Herbs de Provence
    1/2 tsp. fennel seeds
    2 chicken breasts on bone, with skin
    1/2 tsp. salt
    3/4 tsp. pepper

Directions

Preheat oven to 425 degrees with rack in the middle. Toss together tomatoes, onions, olives, salt, sliced garlic, 2 tbsp. oil, 1 tsp. herbs de provence, fennel seeds, 1/2 tsp. salt and 1/4 tsp. pepper. Place into 13 x 9 inch baking dish and push vegetables to the side to make room for chicken. Stir together minced garlic, 1 tsp. salt, 1/2 tsp. pepper, remaining herbs de provence and remaining 1 tbsp. olive oil. Trim excess fat from chicken breasts and cut into 2 pieces each then rub under skin and over skin with seasoning. Roast 1 1/4 hours until instant read thermometer reads 170 degrees.
