Introduction

Great for lunch or after workout snack, high in protein and fiber. I recommend Father Sam's Whole Wheat pitas if they are available in your area. Just make sure whatever pitas you purchase are under 200 calories and have some protein and a good amount of fiber. Use whatever veggies you like, this is my particularly favorite combo. Ingredients

    1 - Whole wheat pita
    2 TBSP - Hummus
    1/4 C- Finely shredded part skim Mozzarella
    Roma Tomato - chopped
    Cucumber- chopped
    Black Olives- chopped or slices
    Scallions (green onions)- diced
    Broccoli- finely chopped
    Bell Pepper (yellow or red)- chopped


Directions

Spread hummus on pita. Sprinkle cheese over hummus. Add veggies on top of cheese and place under broiler. Broil until desired doneness.

(If you like a really crispy pita, broil you pita first a little bit, or heat up a pizza stone under the broiler and place pizza on stone.)
