Ingredients

    3 T olive oil
    1 lb. tempeh, sliced into 1/2 inch strips
    1 small yellow onion
    1.5 cups sauerkraut, drained
    14.5 oz can diced tomatoes
    1 T sweet paprika
    1/2 cup white wine
    1 t caraway seeds
    2 T tomato paste
    1.5 cups vegetable stock, tomato juice, or a combination

Directions

Brown tempeh strips and onion. Add to crockpot with the rest of the ingredients. Cook on low for 6 hours.

Garnish with sour cream if desired (not included in nutritional calculations).
