Introduction

Ingredients

    *Green Chiles diced 4.5 oz (1 can)
    *Cumin seed, 1 tsp
    Olive Oil, 2 tbsp
    Ginger Root, . 1 TBSP grated or Paste
    Garlic, 3 cloves (or 3 tsp preminced in jar with oil)
    Lime Juice, 3 wedge yields (3packets of real lime)
    Brown Sugar, .25 cup, unpacked
    Soy Sauce, .25 cup (see cooking instructions for GF - substitute Bragg Liquid Aminos)
    Green Onions, raw, .25 cup, chopped (3-5 green onions)
    Atlantic Salmon (fish), 24 oz (remove)


Directions

Mix all ingredients in a good sized bowl - skipping the Soy for now. If you want a smoother sauce run it through a food processor. If you want to make it Gluten Free - don't add the Soy sauce until the very end - reserve approx .5 cup of the Chile mixture and add 1/8 cup Bragg Liquid Aminos (it really tastes just like Soy Sauce). Then add 1/4 cup of regular to the the other portion. Put 3/4 of the salmon in the Regular sauce and the rest in the GF sauce. Create Foil 'bowls' one for the regular and one for the GF. Make them big enough to close and then place them on a cookie sheet. Bake at 425 in oven for 25-30 mins. I opened the packets for the last 5 mins to get a carmelization.
