Ingredients

    130 grams cooked bacon, about quarter pound after cooking
    1 large carrot, peeled
    2 large celery stalk, leaves and all, chopped
    1 medium onion, chopped
    4 cloves garlic, chopped
    500 grams white beans, after draining
    100 grams tomatoes, fresh, chopped
    1 beef bouillon cube
    salt and pepper to taste

Directions

makes 4 big servings

Put all the veggies in the food processor and chop.

Cook bacon, drain but leave enough grease, put in soup pot and sauté veggies. Add the drained and rinsed beans, water, 4 cups, you can use more or less, beef cube and simmer for about 30 minutes.

Taste for salt and pepper, leave as is, or use the masher or immersion blender just a few seconds.

Add more water if it is too thick.
