Introduction

One of the few healthy things that I can feed the family and not have to hear any whining about! Well...not much whining. One of the few healthy things that I can feed the family and not have to hear any whining about! Well...not much whining.
Number of Servings: 6

Ingredients

    2 boneless skinless chicken breasts - chopped
    .5 block extra firm tofu - cubed
    .5 medium eggplant - cubed
    2 medium zucchini - sliced
    2 yellow summer squash - sliced
    1 broccoli crown - chopped
    1 can pineapple chunks in juice
    2 Tbs extra virgin olive oil
    3 Tbs Teriyaki marinade
    2 cloves garlic - finely chopped
    1 Tb honey
    1Tb dried dill weed - fresh is good too, you'll just need to use more.


Directions

Cook zucchini, squash, eggplant, garlic, pineapple, olive oil, dill, and 2 Tbs of the teriyaki in a very large wok on high until veggies are almost soft. Add remainder of Teriyaki, chicken, tofu, broccoli and honey continue cooking on high until chicken is cooked through. Serve over rice (not included in nutritional info).
