Introduction

This is for use with the Bariatric Lynn's Pork Gyros recipe but can also be used for other gyros, Greek salads, etc. It is really good and gets better over the next couple of days in the refrigerator.

Number of Servings: 8

Ingredients

    2 cups Greek Yogurt
    2 garlic cloves, finely chopped
    1/4 cup English cucumber, peeled and finely grated
    1 plum tomato, seeded, finely diced
    2 Tablespoons capers, drained
    2 Tablespoons fresh dill, finely chopped (or 1 teaspoon dill seed if fresh dill is not available)
    1 Tablespoon red-wine vinegar
    Kosher salt
    Freshly ground pepper

Directions

Stir together yogurt, garlic, cucumber, tomato, capers, dill, red-wine vinegar, salt and pepper in a bowl. Cover and let sit in refrigerator for 30 minutes to 4 hours before serving.

Top the Bariatric Lynn's Pork Gyros with this sauce.

Makes 8 servings - about 2-1/2 Tablespoons per serving.
