Sometimes it is so hard to cook for one person. This recipe is for that person who has to cook for themselves and only themselves. There will be leftovers, but not the kind that lasts for 3-4 days. Ingredients

    2 Tbsp of olive oil
    I 6oz. can of tomato paste
    1 cup of white rice
    1 1/2 cups of water
    1/4 cup chopped yellow onion
    1/4 cup frozen corn
    Seasonings to taste (i.e, paprika, cumin, cilantro)

Directions

Heat oil in a large skillet on medium-high heat and cook the onion until tender. Add rice and cook until it has browns. Once the rice has browned had tomato paste, water, and seasonings. Bring to a boil and stir in corn. Reduce heat to low and cover for 5 minutes or until the rice is tender.
Makes 4 1/4-cup servings
