Ingredients

2.25 lbs ground beef
29 corn tortillas
1 lb jack cheese
1.68 lbs cheddar cheese
1 64 gram can sliced olives
2 large cans of red enchilada sauce
Directions
brown beef
grate or shred cheese
lightly fry tortillas to soften
dip tortilla into sauce
fill with olives beef and cheese
roll closed
place into pan opening down or to the side
repeat until out of tortillas
sprinkle remaining meat and 1/2 of remaining cheese over top of enchiladas
pour remaining sauce over top evenly
top with remaining cheese
bake at 350 for 20-30 minutes
makes 29 1 roll servings

Haven't tried it, but you can save some calories by steaming the tortillas instead of frying them. - 2/21/09

not really sure about how any changes would affect calories. I have never tried steaming them but have done it where I warm the sauce and leave them in a bit longer to soften the tortillas instead of frying. This posted way is just the traditional way I learned and the main way I make them
