Introduction

I love cooking this up and sneaking lots of great veggies into it! I love cooking this up and sneaking lots of great veggies into it!
Number of Servings: 6

Ingredients

    Basic ingredients:
    1 pound pasta (bowtie, rotini or fusili work well), cooked
    1/4 cup basil pesto
    1 red bell pepper, chopped
    1.5-2 cups baby spinach, chopped
    1/2 cup feta cheese

    Add as desired:
    Other fresh veggies: zucchini, corn, green beans, green, yellow, or orange bell peppers, fresh herbs - anything to jazz it up!

Directions

Cook pasta according to package instructions. Drain well and add pesto, tossing to coat.
Add chopped veggies & toss well.
Chill 1-2 hours to cool.
Sprinkle feta over the top & enjoy!
