Introduction

Ingredients

    1 Package Chicken Rice A Roni (made without butter - use Pam and if needed a tad bit of water)
    2 1/2 Cups of Water
    2 Cups Cooked Chicken (Diced)
    1 1/2 Cups Frozen Peas or peas pods
    1/2 Cup Fresh Red Bell Pepper chopped
    1 Garlic Clove Pressed or minced
    3 Tbsp Creamy Peanut Butter
    2 Tbsp Soy Sauce
    1/8 to 1/4 tsp Red Pepper Flakes (Optional)
    Chopped Fresh Cilantro (Optional)

Directions

1. In a large skillet, combine rice-vermicelli mix and 2 tablespoons margarine or Spray the pan generously with Pam Cooking spray to reduce the fat and calories. Saute´ over medium heat until vermicelli is golden brown, stirring frequently.
2. Slowly stir in 2 ½ Cups of water and the Special Seasonings. Bring to boil.
3. Cover and reduce heat, simmer 10 – 12 minutes (watch that this doesn’t dry up). Stir in chicken, peas or pea pods, bell pepper, garlic, peanut butter, soy sauce and red pepper flakes, if desired. Return to simmer – add a bit more water if it’s too dry. Cover and simmer for 5 to 7 minutes until the vegetables are crisp-tender.
4. Top with fresh chopped Cilantro just before serving.
