Number of Servings: 2

Ingredients

    1) Egg, fresh, 3 large
    2) Spinach, fresh, 1 cup
    3) Cheddar or Colby Cheese, Low Fat, 0.25 cup, shredded - or any other low fat shredded cheese
    4) Land O Lakes light butter with canola oil, 0.5 tbsp
    5) Fat Free Half-and-Half 2 tbsp

Directions

Wisk eggs and add half-and-half
Preheat the skillet with butter
On low heat cook eggs and add shredded cheese
Right before eggs are done add spinach
Mix and scramble well
Serve with salsa!
