Ingredients

    1 lb lean ground turkey
    1 large egg white
    1/2 c seasoned bread crumbs
    1 1/2 tsp oregano
    1 tsp garlic powder
    8 c low fat chicken broth
    2 c thinly sliced escarole
    1 med sweet onion cut in half and then sliced thin
    1/2c grated carrots
    1 (16oz) box of Orzo pasta

Directions

In a bowl mix together turkey, egg white, bread crumbs, oregano and garlic powder. Shape into 3/4 inch balls.
In a large saucepan heat broth to boiling, stir in escarole, onions, carrots and meatballs. Return soup to boiling and cook orzo for 6-7 minutes on a low boil. Soup is done when meatballs float to the top.
