Introduction
This is a tasty low-fat muffin recipe that a friend of mine shared with me. She normally adds chocolate chips, but you could also use fresh blueberries for a healthier twist! Ingredients

Dry Ingredients
1-1/2 cups old fashioned, large flake oats
1-1/4 cups flour
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp cinnamon
Mix dry ingredients together and set aside.
Wet Ingredients
1/2 cup milk
1 cup applesauce (unsweetened)
1/2 cup brown sugar
3 tbsp canola oil
1 egg white
Combine in a separate bowl.
Topping
1/2 cup oats
1 tbsp brown sugar
1/4 tsp cinnamon
2 tbsp melted butter
combine in small dish and set aside.
Directions
Preheat oven to 400 degrees F.
Grease muffin tin (NOTE: Do not use liners...they stick!)
Mix together dry ingredients. In a separate bowl mix together wet items. In a small dish combine topping ingredients.
Combine wet and dry ingredients in the larger of the two bowls. Mix well until moist.
Pour into muffin tin in 12 equal portions.
Sprinkle with topping.
Bake for 20 minutes or until toothpick inserted into centre comes out clear.
