    93% Lean Ground Beef, 16 oz (remove)
    Old el Paso enchilada sauce mild, 4 serving (remove)
    Scallions, raw, 1 cup, chopped (remove)
    Kraft 2% mild mild cheddar cheese shredded, 56 gram(s) (remove)
    Mission Yellow corn Tortillas extra thin soft (2), 4 serving (remove)
    *Velveeta Light Cheese Product, 1 oz (remove)
    Garlic, 1 tsp (remove)


Brown ground beef and drain real well. Add diced onions and garlic powder or diced garlic ..Add meat back to frying pan and heat..Add velveeta cheese and 1/4 cup of enchilada sauce..Heat thouroughly..Place 8 corn tortillas in microwave and heat or you can dip them in chicken stock, fat free, that has been heated..Make sure if you dip them ..Do it fast..Or they will become toooo soft..Take a 8" square pan and spray with nonfat nonstick spray ..Heat oven to 350 degrees..Place a tortilla in pan and put meat mixture on it and roll it up ..Do all 8 tortillas this way..Then add rest of enchilada sauce over the tortillas..Sprinkle shredded cheese over the sauce and you can sprinkle some scallion tops that are diced up on top of the cheese..Salt and pepper to taste..Heat for 30 minutes in oven..Enjoy!
