Ingredients

    Ingredients:


    Red Ripe Tomatoes, 8 medium whole (2-3/5" dia)
    Onions, raw, 1 cup, chopped
    Garlic, 2 cloves
    Oregano, ground, 1 tbsp
    Thyme, ground, .5 tbsp
    Olive Oil, 1 tbsp
    *Campbell's low sodium chicken broth, 4 cup *Balsamic Vinegar, 4 tbsp
    Parsley, 2 tbsp
    Orzo Pasta, 0.33 cup (remove)


Directions

Saute onions, garlic and herbs in olive oil until onions are tender. Add roughly chopped tomatoes. Cook tomatoes until they have cooked down and are rendering juice. Add chicken broth and simmer for about 15 minutes. Salt and pepper to taste as soup may be more or less salty depending on whether you have used low or regular sodium broth. Stir in balsamic vinegar. Add orzo and cook for 5 more minutes. Add fresh parsley at the end. You can also top the soup with parmesan cheese for added flavor.
