Introduction

Ingredients

    2 C. Organic Baby Spring Greens
    12 grape tomatoes, cut in 1/2
    1/2 C Sprouts
    1/2 C Cilantro
    1/4 Avocado, diced (avocado helps your body absorb all the of the vitamins etc)
    1/4 C Jicama
    1/4 C Purple Cauliflower
    1/4 C. Freshly cooked beets
    I garlic clove, diced teeny tiny
    1 oz. Kalamata or other olive
    1/2 Yellow/Red/Orange bell pepper, diced
    1 T. each sunflower and pumpkin seeds
    2 T. Chopped Oregon filberts
    1/4 C. cooked barley or Kashi
    1 T. cooked flax seeds
    2-4 oz. Nitrate free smoked or canned salmon
    1/4 C. Gruyere or other hard cheese

    For dressing I like 1/2 tsp sesame oil mixed with tarragon vinegar to taste.

Directions

I like to cut up some of the vegetables on my day off and put them together. I add the salmon right before I am going to eat it.
