A Thai salad of sorts. A Thai salad of sorts.

    1 lb ground chicken/pork/turkey. Coarser is better
    juice of one lime
    4 tbsp fish sauce, or to taste
    2 tbsp rice vinegar, or to taste

    1 tbsp roasted rice powder (optional)
    4 tbsp chopped cilantro
    3 green onions, chopped
    1 minced shallot
    3 tbsp chopped mint leaves, if you can find them
    1 chopped green chili (optional)
    1/4 cup ginger-garlic paste, or to taste
    shredded sliced cabbage or iceberg lettuce
    1/4 cup chopped cilantro
    2 cups rice


Marinate the ground meat in the fish sauce, lime juice, and rice vinegar, for 15 minutes to an hour.

Cook meat over medium heat until done through. Do not overcook. Add shallots and ginger-garlic paste, cook for one minute more. Add cilantro, scallions, mint, chili and rice powder, and toss.

Serve over rice and cabbage.

You can add some sweet black soy sauce and sriracha sauce if you like.
