Ingredients

6 large eggs
4 slices 4% lean low sodium ham, diced
2.5 oz extra sharp cheddar cheese, diced
1 can mushroom stems and pieces
3-4 Tablespoons diced green chiles
2-3 Tablespoons grapeseed oil
2-3 Tablespoons water
Salsa to taste
Optional: Can add diced onions for extra flavor or diced green onions for color.
Directions
Heat large cast iron skillet with grapeseed oil.
Beat eggs with water, ham, and chiles. Pour mixture into hot skillet. Sprinkle mushrooms evenly on top. Scatter diced cheese on top of all.
Cover pan and cook on low heat until top is set and cheese melted.
Can add chopped onions for extra flavor. Or top with diced green onions.
Makes four generous servings (pie shaped - about 4 inches)
