Ingredients

1/4 Cup Soft Butter
1/2 Cup Brown Sugar
3 Whole Bananas, mashed
1/4 Cup Milk
1 Teaspoon Vanilla Extract
2 Large Eggs
2 Cups Flour
2 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Walnuts, chopped
1/3 cup craisins [dried sweetened cranberries]
Directions
Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.
In a large mixing bowl, cream butter and brown sugar together until fluffy. Mash the bananas.
Add mashed bananas, milk, vanilla and eggs; mix well.
Fold in flour, baking powder, soda and salt; blend just until moistened.
Stir in walnuts and craisins. Pour batter into prepared muffin cups.
Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Cool for 5 minutes, then remove muffins and place on a wire rack to cool completely.

These muffins were great!
I made a couple revisions based on what I had on hand:
I used wheat flour instead of white.
I didn't have brown sugar, so I used regular.
I used skim milk with a tsp of fat free half & half mixed in for consistency and they came out great!
I'll definitely make again! - 8/28/10
