Introduction

Tasty, spicy side to lots of dishes!! Tasty, spicy side to lots of dishes!!
Number of Servings: 4

Ingredients

    1 can (15oz) or approx 1 1/2 cups black beans, rinsed and drained
    1 cup frozen corn kernels, rinsed and thawed
    (or fresh corn, if you can get it!!!)
    1 jalapeno pepper, chopped
    1 small red onion, chopped
    1 clove garlic, minced or pressed
    1 small red bell pepper, seeded and chopped
    4 tbsp chopped fresh cilantro
    1 plum tomato, chopped
    Juice of 1 lime
    1 tsp Olive Oil
    1 tbsp Balsamic Vinegar
    Black pepper to taste.


Directions

Mix everything in a bowl. Tastes better if made about 1-2 hours before you eat it. Keeps for a few days in the refrigerator.

4 generous servings.

    Very Good
    I just made this for a garden party I hosted this weekend. It was a delicious side dish! I made it using freshly grilled corn & a grilled poblano pepper which gave the dish a nice hint of heat. I will definitely make this again! - 8/3/08
