Ingredients

1/2 Head of Cabbage, chopped
1/2 cup brown rice
1/2 cup buckwheat
2 cups vegetable broth
1 medium onion
1 tbsp extra virgin olive oil
2 cups of tomato sauce
Directions
Makes 4 servings
Preheat oven to 350
Cook rice and buckwheat in broth on stove or in a rice cooker according to instructions on package.
While that is cooking, sautee the onion in olive oil over medium heat until translucent. Add in cabbage and 2 tbsp of tomato sauce, stirfry briefly and remove from heat.
Cover the bottom of a small cassarole pan with a layer of tomato sauce. Then in layers, add the rice mixture, cabbage mixture and tomato sauce, ending with tomato sauce.
Place in oven, bake for 30 minutes. If the top is browning to fast, cover with tinfoil.
