Introduction

Ingredients

Fajita Size flour tortilla
1/4 cup zucchini
1/4 cup red or green pepper
3 leaves fresh spinach
1/4 cup chopped onion
1 tbsp chopped cilantro
1/2 tablespoon Bob's red Mill Wheat Germ
1/3rd cup shredded colby jack cheese
Directions
Chop all your vegetables and mix into a big bowl -- add wheat germ and season with pepper if you like.
Heat the wells on the GT express and add your tortillas -- pile the veggie mixture onto the tortilla, fold over, and let cook until the tortilla is slightly browned and the pocket is solid.
Great for pack-ahead lunches!
