Ingredients

1 Pound Cooked Skinless White Meat Turkey (cubed or shreded)
1 Pound Red or Yukon Gold Potatoes, cubed
3 Cups Frozen Mixed Vegetables (approx 2, 10 oz bags)
6 Cups Homemade Turkey Stock (you can also use chicken stock)
2 Cups Cold Water
3 Tbsp Corn Starch
1 Tbsp Parsley
1 tsp Black Pepper
Salt to taste
Directions
Makes 8, 1.5 cup servings
Bring Stock to a boil. Add potatoes. Continue to boil approx 10 minutes or until potatoes begin to soften.
Reduce heat to medium and add frozen vegetables. Cook for an additional 10 minutes, stirring occasionally.
Add the turkey meat and heat for 10 minutes, stirring occasionally.
Dissolve the cornstarch in the cold water. Stir the cornstarch mixture into the simmering pot, mixing well. Continue to stir as the stew thickens, 3-5 minutes.
