Ingredients

6 tbsp teriyaki marinade
400g diced chicken
1 tbsp sesame oil
1 green chilli - sliced with seeds
2 tsp garlic puree / 2 crushed garlic cloves
1 medium onion - chopped in wedges
1 zucchini - sliced
5 medium mushrooms - chopped
100g baby corn - chopped in 3
50g mangetout
1 carrot - sliced in ribbons using peeler
Directions
1. Marinade the chicken in the teriyaki sauce for at least an hour.
2. Heat sesame oil and remove chicken from marinade before frying for a 3-4 minutes until browned.
3. Add chilli and garlic and continue frying over a medium high heat for 2 minutes.
4. Add onions and fry for a further 3 mins. Add marinade from chicken (throughout cooking) to prevent drying out.
5. Add the courgettes, and baby corn, fry for 2 mins.
6. Add mushrooms, mangetout and carrots and continue frying for a further 2 mins.
7. Serve immediately.
