A twist on mashed potatoes. A twist on mashed potatoes.
Number of Servings: 5

    1 pound frozen cauliflower
    2 small potatoes (skin on)
    1 T butter
    1/8 cup skim milk
fresh cracked black pepper (to taste)
    garlic salt (to taste)

try boiling the potatoes and cauliflower in chicken broth

Fill large pot with water, set to boil.

Meanwhile wash potatoes and cut into small pieces (about 1/2 inch by 1/2 inch by 3/4 inch). If you prefer you can also peel the potatoes. When water is boiling put the potatoes and 1 pound of frozen cauliflower (or fresh if you prefer) in the water. Boil until a folk easily pierces through both the potatoes and cauliflower.

drain off water. put back on hot stove to help soak up the water. watch this! if the stove is too hot it can scorch the veggies.

In mixer combine the veggies and set on low. Add butter and milk, work the speed up to high scraping bowl when necessary. Add garlic salt and pepper to taste. Enjoy :)
