Ingredients

    3 TBS LOW FAT COTTAGE CHEESE
    1 LARGE ORGANIC EGG (Beaten)
    1 TBS MELTED BUTTER SUBSTITUTE (Like Smart Balance Light)
    2 TBS SELF-RISING FLOUR
    1 PACKET OF SPLENDA
    1/8 TSP VANILLA EXTRACT
    *12 BLUEBERRIES


    [Optional]
    DROP OF ALMOND EXTRACT
    DROP OF ORANGE EXTRACT

    COOKING SPRAY


    * I often substitute other kinds of fruit here, Raspberries are becoming a new favorite, but strawberries, bananas, and even chopped up apple with a little cinnamon goes great!

Directions

- In a large non reactive mixing bowl place...

3 TBS LOW FAT (2% or less) COTTAGE CHEESE
1 LARGE EGG (Beaten)
1 TBS MELTED BUTTER (Use a butter substitute like Smart Balance Light or margarine)
2 TBS SELF-RISING FLOUR
1 PACKET OF SPLENDA (I use 2 tsp if I don't have packets)
1/8 TSP VANILLA EXTRACT
DROP OF ALMOND EXTRACT
DROP OF ORANGE EXTRACT

-Mix ingredients well with a whisk or mixer on low


*12 BLUEBERRIES - rinse well, pat dry & keep on hand to add into the pan

-Heat up a crepe pan or small skillet on the stove using medium heat
- Once pan is hot, spray cooking spray
- add the batter (about 1/4-1/3 cup worth)


- immediately after batter is added, place blueberries (flourette side up) on the pancake in pan
-cook a couple minute, flip over cook till solidified
-repeat until batter/blueberries are finished

SHOULD MAKE 3 SMALL PANCAKES OR 2 MEDIUM ONES

-Recipe is easily doubled or tripled for more people

**Also, if you are not very concerned with calorie content, a couple semi-sweet chocolate chips or crushed Marcona Almonds add great flavor/texture
