A refreshing salad, good for bringing to your potluck dinner. Got the recipe from an almost 93 year old lady who made some for me to try. It was delightful! Ingredients

2 pounds carrots, thinly sliced
1 green pepper, diced.
1 medium onion, diced or grated.
1 can tomato soup
1/2 cup oil
1 cup sugar
1/2 cup vinegar
Directions
1. Cook carrots until tender, drain completely.
2. In a bowl, combine all ingredients. Mix well.
3. Store in covered container in refrigerator over night.
The Carrot Salad keeps very well. In fact it tastes better as it ages for the flavors keep mixing.
